Red Lentil Soup

RED LENTIL SOUP (Kırmızı Mercimek Çorbası)

3/4 cup red lentils
1 small onion, chopped finely
2 tblsp margarine or corn oil
1 tsp paprika
1 tsp salt
5 cups water

Chop the onion finely and add to the margarine or corn oil in the pot. Stir until onion is transparent but not browned. Add the washed lentils and stir for a few minutes then add all the water and salt and paprika and bring to the boil. Simmer for 40 minutes or until the lentils are very soft. Serve hot.

Serves 4-6.
