Leek With Vinegar  (Sirkeli Pırasa)

Leek5 medium size1 kg
Olive Oil8 tablespoon80 gr
Garlic10 clove30 gr
Vinegar1 1/2 cup300 gr
Water (hot)1/2 cup100 gr
Salt2 teaspoon12 gr


Cut off tops and undesired green parts of leeks. Slice into 4 cm (1, 1/2 inch) long chunks. Cut each into 8 pieces lenghtwise. Saute covered in olive oil for 10 minutes stirring occasionally. Add minced garlic, vinegar and hot water; mix thoroughly. Sprinkle with salt. Cover and simmer for 15 minutes or until tender; cool. Garnish with parsley before serving. Serve cold or warm.
