Leek
With Vinegar (Sirkeli Pırasa)

| Leek | 5 medium size | 1 kg |
| Olive Oil | 8 tablespoon | 80 gr |
| Garlic | 10 clove | 30 gr |
| Vinegar | 1 1/2 cup | 300 gr |
| Water (hot) | 1/2 cup | 100 gr |
| Salt | 2 teaspoon | 12 gr |
Preparation
Cut off tops and
undesired green parts of leeks. Slice into 4 cm (1, 1/2 inch) long chunks. Cut
each into 8 pieces lenghtwise. Saute covered in olive oil for 10 minutes stirring
occasionally. Add minced garlic, vinegar and hot water; mix thoroughly. Sprinkle
with salt. Cover and simmer for 15 minutes or until tender; cool. Garnish with
parsley before serving. Serve cold or warm.
