Pancake with Tomato (Domatesli Gözleme)

Flour5 1/2 cup600 gr
Salt1 3/4 tablespoon21 gr
Dry yeast3/4 tablespoon5.5 gr

Water (warm)1 1/2 cup300 gr
Tomatoe2 large size280 gr
Green Pepper10 medium size150 gr
Parsley 1 bunch60 gr
Onion1 medium size60 gr
Oil2/3 cup130 gr
Cokelek- -100 gr
Black Pepper1/2 teaspoon1 gr
Margarine1/3 cup65 gr


Prepare raised dough as instructed in "Cevizli Çörek" (Shortbread with Walnuts). Set aside. For fılling: Saute fınely chopped onion and green peppers (stems and seeds removed) in oil for 2-3 minutes. Stir in diced tomatoes. Simmer for-2 minutes. Season with salt and pepper. Remove from heat; cool. Blend in çökelek and chopped parsley. Divide into 10 portions. Prepare gözlemes following instructions in "Peynirli Gözleme" (Gözleme with Cheese). Brown gözlemes on both sides. Serve hot.

Regional Characteristics:

This variation of gözleme is usually served during summer months with ayran. In Kütahya province tahin or poppy seeds are used as fılling. Instead of çökelek, cheese can be used.
