Wheat Soup (Bulgur Çorbası)

Tomato4 small size400 gr
Green Pepper3 medium size45 gr
Onion2 medium size120 gr
Butter or margarine4 tablespoon40 gr
Tomato paste1 tablespoon10 gr
Water5 cup1 kg
Salt2 teaspoon12 gr
Bulgur 3/4 cup110 gr


Saute chopped onions in margarine for 7-8 minutes until tender crisp. Add tomato paste salt and water stir. Bring to boil. Add peeled and cubed tomatoes, chopped green peppers and bulgur, mixing well. Simmer for 20 minutes. Serve hot.

Regional Characteristics:

This soup is served widely in southern part of Türkiye. Some recipes call for potatoes along with tomatoes. In winter dried form of tomatoes or tomato paste is used instead of fresh ones. In İçel province it is called "lepe".
