Farmer's Soup (
Köylü Çorbası)

Chicken wing2 piece200 gr
Chicken neck1 piece125 gr
Water6 cup1200 gr
Salt2 teaspoon12 gr
Leek1 medium size175 gr
Potato2 medium size200 gr
Celery1 small size250 gr
Carrot1 medium size100 gr
Turnip1 small size125 gr
Flour1 tablespoon6 gr
Margarine3 tablespoon30 gr
Black Pepper1 teaspoon2 gr


Simmer chicken parts in water for 30 minutes or until tender. Remove from liquid; drain. Bone and dice. Set aside. Pare carrots and potatoes. Dice all vegetables. Saute in melted margarine for 10 minutes, until tender, in a large saucepan, stirring occasionally. Stir in flour and mix well. Add chicken broth and diced chicken gradually stirring thoroughly. Sprinkle with salt and pepper. Simmer for 30 minutes. Serve hot.
