Green Olive Salad (Yeşil Zeytin Piyazı)

| Green Onion | 4 medium size | 85 gr |
| Parsley | 1 bunch | 60 gr |
| Walnuts (chopped) | 1 cup | 100 gr |
| Red pepper | 1 teaspoon | 2 gr |
| Black Pepper | 1/2 teaspoon | 1 gr |
| Lemon juice | 2 tablespoon | 20 gr |
Preparation
Combine coarsley
chopped olives, green onions, minced parsley and crushed walnuts together; mix
well. Sprinkle with black and red pepper. Mix thoroughly. Place in a serving
dish. Sprinkle with lemon juice. Garnish with parsley. Serve cold.

It is a tasty
appetizer. The recipe comes from Gaziantep province. Served usually wrapped
with yufka bread or pide on picnics early in the spring. Amount of lemon juice
might be increased.
