Green Olive Salad (Yeşil Zeytin Piyazı)

Green olive (seedless)- -500 gr
Green Onion4 medium size85 gr
Parsley 1 bunch60 gr
Walnuts (chopped)1 cup100 gr
Red pepper1 teaspoon2 gr
Black Pepper1/2 teaspoon1 gr
Lemon juice2 tablespoon20 gr


Combine coarsley chopped olives, green onions, minced parsley and crushed walnuts together; mix well. Sprinkle with black and red pepper. Mix thoroughly. Place in a serving dish. Sprinkle with lemon juice. Garnish with parsley. Serve cold.

It is a tasty appetizer. The recipe comes from Gaziantep province. Served usually wrapped with yufka bread or pide on picnics early in the spring. Amount of lemon juice might be increased.
