Shish Meat Balls (Şiş Köfte)

Lamb Ground Meat (low fat)4 1/3 cup750 gr
Fine bread crumbs (dry)1/2 teacup35 gr
Salt2 1/2 teaspoon15 gr
Black Pepper1 teaspoon2 gr
Oil2 tablespoon20 gr

Preparation

Combine ground meat, bread crumbs, gratedonions, salt and pepper. Blend thoroughly. Knead for 10 minutes. Divide into egg sized pieces mal balls. Thread each ball on metal skewers. Squeeze threaded meat balls firmly on skewers with slightly wetted fıngers until 2 1/2 cm (1 inch) in diameter. Leave finger prints over shish köftes. Brush with oil. Grill over charcoal or broil in oven until golden brown on all sides. Serve immediately while hot.
