Kebab (Tas Kebabı)
|Onion||2 medium size||150 gr|
|Boneles lamb shoulder or shank||- -||750 gr|
|Tomato paste||2 tablespoon||20 gr|
|Water (warm)||1 1/2 cup||300 gr|
|Salt||2 teaspoon||12 gr|
|Black Pepper||1/4 teaspoon||0.5 gr|
|Potato||6 medium size||650 gr|
Cut meat into
2 cm (3/4 inch) cubes. Combine with chopped onions. Cover and saute over low
heat for 40 minutes stirring occasionally, add tomato paste, water, salt and
pepper; stir. Cover and simmer for 20 minutes or until meat is tender. Pare
and cut potatoes into 1 1/2 cm (2/3 inch) cubes. Add to meat; mixing gently.
Cover and simmer for 20 minutes. Serve hot

is arranged on a serving plate in ring form. Bowl of meat is turned up-side
down in the center of rice. It is served for lunch or supper as a main dish.
Sarma or dolma with olive oil is usually served as a side dish.
