Baked Wheat - Ground Meat Burger (Sini Köftesi)

Ground Meat (medium fat)1 1/2 cup250 gr
Margarine1/2 cup100 gr
Walnuts (chopped)1/2 cup50 gr
Pistachionuts (chopped)1/2 cup55 gr

Black Pepper1 1/2 teaspoon3 gr
Red pepper2 1/2 teaspoon5 gr
Allspice1/2 teaspoon1 gr
Cinnamon (if wanted)1/4 teaspoon0.5 gr
Cummin1/4 teaspoon0.5 gr
Potatoe1 large size125 gr
Ground Lean Meat2 1/3 cup400 gr
Bulgur (fine)5 1/3 cup800 gr
Semolina1/3 teacup25 gr
Water2/3 cup130 gr


Prepare fılling according to instrustions in "İçli Köfte". Chill and set aside. Prepare same basic mixture as stated in "lçli Köfte" again. Divide mixture into 2 portions. Spread 1 portion in a well buttered baking pan evenly. Spread filling over layered mixture. Spread remaining mixture over fılling flattening carefully and evenly. Smooth surface with slightly wetted fıngers. Cut into 7.5-8 cm (3-3 1/4 inch) squares. Sprinkle with water. Bake in a moderately hot oven for 35-40 minutes or until light brown. Remove from oven. Sprinkle with melted butter or margarine. Serve hot.

Regional Characteristics:

The recipe for "Sini Köfte" is taken from Gaziantep. Although the ingredients are the same with "İçli Köfte", shaping and cooking methods are different. Since köfte making-kneading and shaping is a time consuming process, this form is prefered by many people. Preparing Sini Köfte is much easier than İçli Köfte. It is served as a main dish for lunch or supper.
