Baked Wheat - Ground Meat Burger (Sini Köftesi)

| Margarine | 1/2 cup | 100 gr |
| Walnuts (chopped) | 1/2 cup | 50 gr |
| Pistachionuts (chopped) | 1/2 cup | 55 gr |
| Salt | 3 teaspoon | 18 gr |
| Black Pepper | 1 1/2 teaspoon | 3 gr |
| Red pepper | 2 1/2 teaspoon | 5 gr |
| Allspice | 1/2 teaspoon | 1 gr |
| Cinnamon (if wanted) | 1/4 teaspoon | 0.5 gr |
| Cummin | 1/4 teaspoon | 0.5 gr |
| Potatoe | 1 large size | 125 gr |
| Ground Lean Meat | 2 1/3 cup | 400 gr |
| Bulgur (fine) | 5 1/3 cup | 800 gr |
| Semolina | 1/3 teacup | 25 gr |
| Water | 2/3 cup | 130 gr |
Preparation
Prepare fılling
according to instrustions in "İçli Köfte". Chill and set aside. Prepare same
basic mixture as stated in "lçli Köfte" again. Divide mixture into 2 portions.
Spread 1 portion in a well buttered baking pan evenly. Spread filling over layered
mixture. Spread remaining mixture over fılling flattening carefully and evenly.
Smooth surface with slightly wetted fıngers. Cut into 7.5-8 cm (3-3 1/4 inch)
squares. Sprinkle with water. Bake in a moderately hot oven for 35-40 minutes
or until light brown. Remove from oven. Sprinkle with melted butter or margarine.
Serve hot.

Regional Characteristics:
The recipe for
"Sini Köfte" is taken from Gaziantep. Although the ingredients are the same
with "İçli Köfte", shaping and cooking methods are different. Since köfte making-kneading and shaping is a time consuming process, this form is prefered by
many people. Preparing Sini Köfte is much easier than İçli Köfte. It is served
as a main dish for lunch or supper.
