Stuffed Leek with Ground Meat (Etli Pırasa Dolması)

Leek6 piece1200 gr
Water2 1/4 cup450 gr
Salt2 teaspoon12 gr
Rice1/3 cup60 gr
Onion2 medium size120 gr
Parsley 1 bunch60 gr
Ground Meat (medium fat)1 1/2 cup250 gr
Black Pepper1 teaspoon2 gr
Margarine1 tablespoon10 gr
Egg1 piece50 gr
Lemon juice2 tablespoon20 gr


Peel, wash and remove root ends and unwanted green parts of leeks. Cut crosswise into 6 cm (2 1/2 inch) long pieces. Simmer in salted water for 10 minufes or until tender. Remove from pan, reserving liqiud; drain. Push inside layers (center parts) of leek out with fingers, making leek shells open on both ends. Set aside. Combine ground meat, rice, fınely chopped onions and parsley, salt and pepper. Add water, mixing thoroughly. Fill leek shells with fılling. Press both ends with finger. Arrange in a shallow saucepan side by side. Heat reserved liquid. Add to leek. Cover and simmer for 30 minutes or until rice is tender. Reduce heat. Combine egg and lemon juice beating until well blended. Add 2-3 tablespoons of hot liquid from pan, stirring well. Pour over leeks; stir gently. Simmer for 1-2 minutes. remove from heat. Serve hot.
