Gelatin with Whipped Cream - Court Style (Kaymaklı Elmasiye)

Gelatin16 leaves40 gr
Egg whites2 piece60 gr
Sugar1 1/3 cup240 gr
Lemon juice1 teaspoon5 gr
Water5 cup1 kg
Sugar dye (red)1 tablespoon10 gr
Whipping cream2/3 cup125 gr


Soften gelatin in cold water for 2 hours: drain. Place into a saucepan. Add egg whites, sugar, lemon juice and 4 cups of water. Heat over low heat for 30 minutes without stirring until gelatin is dissolved. Strain and divide into 2 parts. Add food coloring into 1 part and stir well; cool. Pour into 6 individual bowls or cups. Chill until set. Pour uncolored part over colored part and chill for 4 hours. Unmold. Top with whipped cream before serving.
