Baked and Caramelized Pudding (Kazandibi)
| Ingredients | Measure | Amount |
| Rice flour | 1/2 cup | 65 gr |
| Starch | 1/2 cup | 55 gr |
| Milk | 5 cup | 1 kg |
| Sugar | 1 1/3 cup | 240 gr |
| Vanilla | 2 1/2 teaspoon | 5 gr |
| Margarine | 1 teaspoon | 5 gr |
| Sugar (powdered) | 3 tablespoon | 20 gr |
Preparation
Grease bottom
of a baking pan of 25x30x3 (9x13x1 1/2 inch). Sprinkle with confectioners sugar.
Set aside. Combine rice flour, starch and milk in a saucepan. Cook over low
heat for 10 minutes or until thickened, stirring constantly in rotary fashion
with a wooden spoon. Stir in sugar blending well. Simmer for 1 minute over low
heat stirring gently and constantly. Remove from heat. Add vanilla; stir well.
Spread into baking pan. Bake in a moderately hot oven for 15-20 minutes or until
sugar is caramelized. Remove from oven. Place in a cold water bath. Let stand
for 10 minutes. Remove from water bath; chill. Cut into 6 even portions. Fold
each portion in half lengthwise with a turner up sides in. Chill before serving.
