Lemonade (Limonata)

Sugar1 cup180 gr
Water7 1/2 cup1.5 kg
Lemon rind2 teaspoon5 gr
Mint leaves (fresh)10-15 sprigs10-15 gr
Lemon6 medium size600 gr

Preparation

Dissolve sugar in water completely stirring occasionally. Reserve 1 tablespoon. Rub lemon rind and 6-8 mint leaves with reserved sugar until all flavor is extracted (or pound lemon rind, mint leaves and sugar in a porcelain mortar). Stir in sugar solution; strain. Squeeze lemons to get juice. Combine with sugar solution. Chill and serve in long glasses garnished with mint leaves.
