ANCHOVY DISH (Hamsi Yemeği)

One kg of anchovies will be cleaned, washed and their bones will be removed. They will be beaten in a mortar or in a kitchen robot. They will be kneaded with the addition of olive oil, vinegar, parsley and salt, and meatballs will be made of the mixture and fried in oil. They will be served hot with shredded parsley and lemon juice.
